Lowered fat and low sodium Beef Stroganoff

Recipe Ingredients for Quick & Easy Beef Stroganoff

8 oz Beef, Top Sirloin
1 3/4 serving Beef Cooking Stock, Unsalted, Kitchen Basics, 1 Cup
1 serving Worcestershire Sauce, Reduced Sodium, Lea
4 oz Egg White Pasta
1/4 cup 2% milk
8 tbsp Fat Free Sour Cream
3 tsp Garlic Powder
1/2 cup, chopped Squash, Summer, Zucchini, Includes Skin
7 1/2 grams Extra Virgin Olive Oil

Recipe Directions for Quick & Easy Beef Stroganoff

  1. Cut 8 ounces of beef sirloin steak into thin strips. Brown with diced zucchini in 1 tablespoon olive oil. (You can 1/4 cup sliced onions here .. I was out.) (Once browned, you can also add about 1/2 cup diced dried mushrooms. I don't care for them.)

  2. Add 1 3/4 cup no salt added beef cooking stock, 1 Tbs garlic powder, and 1/4 tsp Lower Sodium Worcestershire sauce.

  3. Bring to a boil.

  4. Stir in about 3/4 to 1 cup egg noodles. (I used no yolk noodles)

  5. Lower temperature to medium heat. Cook, covered, until noodles are done.

  6. Stir in 1/4 cup 2% milk and 1/2 cup No Fat sour cream.

  7. Heat on low heat for 5 mins.

  8. Serve and enjoy!

  9. We got 2 diet sized meals and one non-diet sized meal. Basically, divide into 4 portions. Hubby got 2 portions, I got one, and I put one away for lunch one day.
