So good and so fast! It's very versatile.

Recipe Ingredients for Quick Creamy Zucchini Soup

3 cups chopped zucchini
1 onion, chopped
2 garlic cloves, peeled
2 cups chicken broth or vegetable broth or water or a combination
1/4 tsp salt
1 cup soymilk
2 tbs flour
1 tsp basil
1/2 tsp parsley
1/8 tsp cider vinegar
1 salt
1 pepper

Recipe Directions for Quick Creamy Zucchini Soup

  1. In a large pot, combine broccoli, onion, garlic, broth or water, and salt. Cover pot, bring to a boil, and then simmer for about 15 minutes, or until everything starts to get soft.

  2. Using an immersion blender, puree the soup until smooth. Or, use a ladle to transfer 2/3 of soup into a blender and blend until smooth and then pour back into the saucepan. Reduce heat to a medium setting.

  3. In a small bowl, combine soymilk with flour and whisk together until smooth. Pour mixture into soup and stir. Add basil and parsley and stir until soup begins to thicken. Add vinegar and salt and pepper to taste.

  4. For variety, you can use broccoli and/or frozen broccoli florets. Regular milk works just fine in place of the soymilk.
