Recipe Ingredients for Quick & Creamy Lowfat Pumpkin Soup

1 small onion, chopped
15 oz. pumpkin, canned
1/2 cup soy milk
1/2 cup applesauce
1 tsp. curry powder
2 dashes hot sauce
32 oz. vegetable broth (2 cans)

Recipe Directions for Quick & Creamy Lowfat Pumpkin Soup

  1. Sautee onions in about a 1/d cup of water in a large saucepan or stock pot.

  2. Add all ingredients except soy milk and simmer about 10 minutes

  3. Remove from heat, stir in soy milk and serve.
