1 c soymilk w/ 2 tbsp flour can be substituted for the whole milk.

Recipe Ingredients for Quick Creamy Broccoli Soup

3 c broccoli florets
1 yellow onion, quartered
2 garlic cloves, peeled
2 c vegetable broth
1/2 tsp salt
1 c whole milk
1 tsp basil, minced
1/2 tsp dried parsley
1 dash of white vinegar
1 dash black pepper

Recipe Directions for Quick Creamy Broccoli Soup

  1. Combine broccoli, onion, garlic broth and salt in a large pot. Cover, bring to a boil, then simmer 15 min.

  2. Transfer 2/3 of soup to a blender and blend until smooth. Return to pot and heat on medium.

  3. In a small bowl, whisk together flour and soymilk until smooth, if using. Pour either this mixture or the whole milk into the soup and stir.

  4. Add basil and parsley and stir until broccoli is tender and soup begins to thicken. Add vinegar, salt, and pepper to taste.
