Recipe Ingredients for Quick-Cook Beef Barley Soup

1 1/2 pounds sirloin, 1-inch cubes
1/4 cups all-purpose flour
1/2 teaspoon salt
3 tablespoons vegetable oil
1/2 cup carrots, chopped
1/2 cup celery, chopped
1 small onion, diced
14 oz white mushrooms, sliced
2 clove garlic cloves
5 cups beef broth
1 cup Quick Barley

Recipe Directions for Quick-Cook Beef Barley Soup

  1. Mix flour and salt in a large zippered plastic bag. Add the beef and shake until the beef is well-floured.

  2. In a large dutch oven or soup pot, heat two tablespoons over medium high heat. Place the beef on the bottom of the pot, as spread-out as possible and allow to brown, 2-3 minutes; turn and brown an additional 2-3 minutes. Stir and make sure the beef is well-browned all over; remove from the pot and set aside.

  3. Pour the last tablespoon of oil into the same pot and add vegetables, except the garlic. Cook, stirring often, until most of the moisture has released from the mushrooms, 5-8 minutes. Add the garlic and allow the aroma to bloom, 30 seconds; pour in the beef broth. Stir in the barley and bring to a low boil. Reduce the heat and simmer, covered, for 20-25 minutes.

  4. Serve warm.
