use more pineapple if you like. Also use 1/2 box of frozen spinach

Recipe Ingredients for QUICK CHICKS

1 tbsp olive oil
2 med onions
2 cloves garlic
1 tsp curry powder
1/2 med yellow pepper chopped
28 oz diced tomatoes
1 can19 oz chickpeas
1/2 cup pineapple tidbits
2 cups thinly sliced spinach

Recipe Directions for QUICK CHICKS

  1. Heat oil in dutch oven over med heat. Add onion &

  2. garlic and sauté 1 to 2 minutes. Add the curry &

  3. cook for 30 more seconds. Mix in chopped pepper

  4. cook for 3 minutes or until softened. Stir in

  5. tomatoes, chickpeas and pineapple. Reduce heat

  6. to med-low and heat 10 to 15 minutes or until

  7. heated thoroughly. Stir in spinach in the last five minutes.

  8. Serve immediately and it serves tons if you add more good stuff
