I threw this together once on a whim after skiing all day and my husband repeatedly requests this dish. Serve with hot cooked brown rice to up the grains along with avocado and lemon. I've used a soup laddle of the poaching liquid in place of a cup of broth if I need to. To be quicker, I've just used half a packet of taco seasoning in place of the spices and left over rotisserie chicken.

Recipe Ingredients for Quick Chicken Vegetable Soup

1 chicken breast, poached
1 tablespoon extra virgin olive oil
1/2 cup onion, chopped
1/2 cup carrots, chopped
1/2 cup celery, chopped
2 cloves garlic, minced
1/2 cup green bell pepper, chopped
6 cups chicken broth, reduced sodium
1/2 lb sweet potatoes
1 tablespoon paprika
1 tsp chilli powder
1 tsp cumin
1/2 cup corn
1 cup cilantro leaves, chopped

Recipe Directions for Quick Chicken Vegetable Soup

  1. To poach chicken, place meat in a small pot or large saucepan and fill with water until chicken is just covered. Bring water to a slow rolling boil and simmer until chicken is no longer pink. (roughly 25 minutes)

  2. While chicken is cooking, chop up the onions, carrots, celery and bell pepper. Slice the sweet potato into bite-sized wedges.

  3. Heat oil in a large soup pot or dutch oven over medium-high heat. Add first four ingredients and saute until onions begin to turn opaque. Add bell pepper.

  4. Slowly pour in chicken broth, then add potatoes and spices, stirring. Cover and simmer until potatoes are nearly done.

  5. Meanwhile, remove chicken to a cutting board. Using two forks, shred chicken and add it to the pot, stirring to combine. Add corn and heat through.

  6. Serve with hot cooked rice, cilantro, lemon and avocado as garnish.
