Quick enchiladas made with left over chicken

Recipe Ingredients for Quick Chicken Enchiladas

1 leg, bone and skin removed Chicken, Leg, Meat Only
1/4 cup Fancy Colby-Jack Shredded Cheese
1 cup Enchilada Sauce
4 Tortilla OLE Fajita 6'' Flour Tortillas
1 medium (4-1/8" long) Onions, Spring Or Scallions

Recipe Directions for Quick Chicken Enchiladas

  1. Shred cold leftover chicken

  2. Heat sauce

  3. Pour half a cup of sauce into the cold shredded chicken and add a sprinkle of cheese.

  4. Put chicken/sauce/cheese mixture into small flour tortillas. Roll together and put in a baking dish.

  5. Cover rolled tortillas with remaining half cup of sauce.

  6. Sprinkle with cheese and diced green onion.

  7. Bake at 375 for 15 mins.
