The dumplings are cut up flour tortillas, cooked in the thickened broth. Good comfort food!

Recipe Ingredients for Quick Chicken & Dumplings

3 pounds chicken
1 pound egg noodles
12 tortillas, flour
1/4 c. corn starch
1 cup non-fat milk

Recipe Directions for Quick Chicken & Dumplings

  1. Cook chicken until tender, with meat falling off bones.

  2. Remove chicken from broth and allow to cool.

  3. Bring broth to boil and add egg noodles.

  4. When noodles are tender, thicken broth with corn starch, mixed with a little of the hot broth before adding.

  5. Add milk to thickened broth.

  6. Cut tortillas into squares and drop a few at a time into the thickened broth and noodles.

  7. Remove chicken from bones and add to mixture.
