A quick throw together with left over barbecue chicken

Recipe Ingredients for Quick Chicken Chilli

4 serving (Goya) pinto beans
5 clove Garlic
1 small Onions
1 cup Mild Diced Tomatoes and Green Chilies
1 plum tomato Tomatoes, Red, Ripe
1 serving VIGO EXTRA VIRGIN OLIVE OIL
3 oz Chicken, Breast, Meat Only

Recipe Directions for Quick Chicken Chilli

  1. Chunk the onion and garlic.

  2. Place in small sauce pan with olive oil. Cook until translucent.

  3. Add the fresh and canned tomatoes. Boil down for about 5 minutes. Add the chicken and beans (any kind).

  4. Cook down. Spice to your tastes. I used paprika, cayenne, cumin, chilli powder, garlic and onion powder and a touch of salt.

  5. Enjoy alone or over pasta or rice!
