Recipe Ingredients for Quick Chicken Chili

3.5 cup, chopped or diced Chicken, Meat Only, Roasted
4 tbsp Chipotle Peppers
14 oz Stewed Tomatoes, Original Recipe
0.5 cup, chopped Onions
2 clove Garlic
2 oz Cilantro
1 oz Peanuts Lightly Salted Dry Roasted
1 tsp Cumin
2 tbsp Olive Oil
1.25 cup Light
14 oz Pink Beans in Sauce

Recipe Directions for Quick Chicken Chili

Puree everything except chicken, oil, sour cream and beans in blender for 2 minutes until smooth. Heat oil in large sauce pan, then pour in sauce and boil, uncovered, stirring occasionally, 5 min. Meanwhile, shred chicken and discard skin and bones. Stir chicken and beans into sauce; reduce heat to low and simmer, covered, 10 min. Serve, garnished w/sour cream.
