Recipe Ingredients for quick chick and noodle

1 tbs. extra-virgin olive oil
1 lb. boneless, skinless chicken breast
2 carrots
1 medium yellow onion
2 stalks celery
7 2/5 cups of chicken broth, low sodium no fat
1/2 lb. egg noodles

Recipe Directions for quick chick and noodle

  1. heat evoo over medium-high heat, big pot

  2. dice chicken, add to pot, brown it

  3. add veggies, thyme, salt and pepper

  4. reduce heat to medium, cover...sweat veggies for 5min, stir occ.

  5. add broth

  6. bring to boil

  7. add noodles, cook 10 min
