In order to be the real deal it should have chorizo added, and the potatoes should be boiled and then pureed instead of just adding the dehydrated mashed flakes, but oh-well.

Recipe Ingredients for Quick (cheat version) Caldo Verde soup

2 cup, chopped Collards
3 cup Potatoes, Mashed, Dehydrated, Flakes
1 1/2 tbsp olive oil

Recipe Directions for Quick (cheat version) Caldo Verde soup

  1. Boil the collards (if draining for mesurement of the collards in cups, save the water! it will be greenish and full of vitamins and flavour, and you should use it for the soup)

  2. Boil the collard water and add the flaked mashed potatoes, then add more water to thin if too thick. It should yield at least about 6 servings.

  3. Add the collards back to the pan, if not already there. Adjust the salt and add the olive oil.

  4. Serve hot or let cool down and refrigerate for about 5 days tops.
