Recipe Ingredients for Quick Carrot Muffins

3/4 cups all-purpose flour
3/4 cups whole wheat flour
3/4 cups quick-cooking oats
2 tsp ground cinnamon
1 1/4 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
5/8 cups brown sugar
2 tbsp butter, softened
1/2 cup water
1 large egg
1 cup milk
1 tsp vanilla extract
1 1/2 cups carrot, finely shredded
1/2 cup raisins

Recipe Directions for Quick Carrot Muffins

  1. Preheat oven to 350* F.

  2. To prepare bread, combine flours, oats, cinnamon, baking powder, baking soda, and salt.

  3. Place brown sugar and butter in a large bowl; beat with a mixer at medium speed until well blended. Add water and egg; beat well. Beat in milk and vanilla. Gradually add flour, stirring just until blended. Fold in carrot and raisins.

  4. Spoon batter evenly into 12 muffin papers. Bake at 350*F for about 35 minutes, or until a wooden toothpick inserted in the middle of a muffin comes out clean. Cool in pan 10 minutes on a wire rack; remove from pan. Cool completely on a wire rack.
