2 large eggs
1/4 cup skim milk
1 cup frozen spinach
1/2 cup shredded cheddar cheese

Recipe Directions for Quick Breakfast Queche

Make sure the spinach is thawed before using. Mix all the ingredients together in a microwave save bowl. Cover with clear plastic wrap, and microwave on high for 3 minutes, or until you can no longer see liquid in the center. Cut in half and enjoy. Use salt and pepper to taste.
