Recipe Ingredients for Quick BLT

1 tsp olive oil
2 slices vegan bacon (try Lightlife Fakin? Bacon Strips)
2 slices whole grain bread
1 tbsp vegan mayonnaise
1 small tomato, sliced
4 leaves spinach (or other dark leafy salad greens)
1/2 avocado, sliced (optional)

Recipe Directions for Quick BLT

  1. Heat the olive oil in a small skillet over medium heat. Add the vegan bacon and cook until golden on both sides.

  2. Meanwhile, toast the bread. Spread with the vegan mayonnaise and top with the ?bacon,? tomato, greens, and avocado.

  3. Variation: If you like a little extra kick, try sprinkling on hot sauce or salt for more flavor.
