Vegetarian chili with sweet potatoes!

Recipe Ingredients for Quick Black Bean and Sweet Potato Chili

34.5 oz Sweetpotato
2 tbsp Olive Oil, Extra Virgin
1 medium Onions
3 cloves, raw Garlic
1 medium raw Bell Pepper Red
3 cup Organic Black Beans
6 cup Diced Tomatoes
7 tablespoon Diced Green Chilies
2 tsp Cumin
0.5 tsp Oregano

Recipe Directions for Quick Black Bean and Sweet Potato Chili

  1. 1. Bake or microwave the sweet potatoes on high until just firm, about 3-4 mins per potato. When cool enough to handle, peel and cut into 3/4 inch dice. Set aside.

  2. 2. Heat oil in a large soup pot. Add onion and garlic and saute over medium heat until golden. Add the bell pepper, beans, tomatoes, chilies, cumin, and oregano. Bring to a simmer. Cover and simmer gently for 15 minutes. Add the sweet potatoes and continue to simmer until the vegetables are tender, 10-15 mins.

  3. 3. Season lightly with salt and pepper. If time allows, let stand off the heat for 1-2 hours, then heat through as needed. (I never do this and it is still delicious! However, leftovers are amazing!

  4. Serve with cilantro to sprinkle over the top. Bob's Red Mill Gluten-Free Cornbread goes well with it also!
