Quick and easy! It serves 6. I had trouble getting the recipe analyzer to get the correct calories for one serving of the soup. You use 2 15 oz. cans of black beans. I used a 16 oz bag of frozen corn. I think the calories are correct in the nutritional analysis.

Recipe Ingredients for Quick Black Bean Soup

1 tbsp olive oil
1 onion, chopped
3 cloves garlic, minced
388 g black beans (cup)
3 cups frozen corn
14 oz Chicken Broth
14 oz can diced tomatoes
1 tsp dried thyme leaves
1 tsp dried basil leaves
1 tsp cumin
1 tsp pepper

Recipe Directions for Quick Black Bean Soup

  1. Cook onion and garlic in oil in a large soup pot

  2. Open one can of black beans, mash the beans using a fork and scoop out the can into the pot. Add the other can of black beans, the corn, chicken broth, and tomatoes

  3. Stir in seasonings including a bay leaf

  4. Cover pot and bring to a boil

  5. Reduce heat to simmer for 8-10 minutes, stirring frequently

  6. Remove Bay leaf and serve
