delicious low-cal soup with lots of filling protein and fiber. Can make it vegetarian style by using vegetable broth instead of chicken.

Recipe Ingredients for Quick Black Bean Soup

2 cups black beans
2 cups chicken broth
1 red bell pepper
6 baby carrots
3/4 cups salsa
2 tbsp cheddar cheese
1 ounce tortilla chips

Recipe Directions for Quick Black Bean Soup

  1. Bring chicken broth, 1/2 cup black beans, minced red bell pepper, minced onions, minced carrots to a boil, then simmer for 5-10 minutes.

  2. Puree above mixture either in blender or with immersion blender

  3. put back in pot and add remaining black beans, salsa and simmer for 10 minutes.

  4. Serve in bowl and place cheddar cheese and crumbled tortilla chips on top, serve.
