Very fast soup, that tastes good over brown rice

Recipe Ingredients for Quick Black bean soup

1/2 onion, chopped
1 zucchini, chopped
2 carrots, chopped
1 tsp olive oil
1/2 c frozen corn
30 oz canned black beans
1 cup mild salsa
2 tsp ginger

Recipe Directions for Quick Black bean soup

  1. Heat olive oil in a pan. Saute onions, ginger, and carrots, for a couple of minutes. Add zucchini and saute a minute or two more.

  2. Add frozen corn. Heat for a minute. Add beans and heat through.

  3. Add salsa. Heat. Add water if you want a thinner soup.
