Recipe Ingredients for Quick Black Bean Soup

1 tablespoon grapeseed oil
1 cup diced onion
1 tablespoon garlic
1 cup diced celery
1/2 cup diced carrot
64 oz vegetable stock
1 teaspoon ground coriander
1/4 teaspoon cayenne pepper
1 tablespoon balsamic vinegar
30 oz canned black beans, rinsed
1/4 teaspoon salt

Recipe Directions for Quick Black Bean Soup

Heat oil in a large saucepan over medium-high heat. Add onion, cook 5 minutes, stirring occasionally. Add garlic, carrot, and celery; cook until soft bout 5 minutes. AAdd stock, beans, coriander, and cayenne pepper; simmer uncovered 10 minutes. Stir in vinegar. Transfer to blender or food processor; process to desired consistency. Reheat if necessary. Ladle into shallow bowls.
