Quick spicy chili recipe based on the recipe in Dr. Neal Barnard's book "21 Day Weight Loss Kickstart"

Recipe Ingredients for Quick Black Bean Chili

7 cup Black Beans
3.5 cup Tomatoes
2 clove Garlic
4 tbsp Chili Powder
1 tsp Oregano

Recipe Directions for Quick Black Bean Chili

  1. 1. Over medium-high heat, saute onion until it's mostly browned. Add a thin layer of water and quickly stir the onion. Repeat 2-4 times to improve flavor.

  2. 2. Reduce heat to medium. Add garlic and saute 1 min. Then add chili powder and cook 30 seconds while slowly stirring.

  3. 3. Add beans, tomatoes and oregano mixing everything together. Add water if needed to keep mixture from sticking to pan.

  4. 4. Simmer at least 5 minutes.

  5. 5. Optional - add fresh chopped cilantro and lime juice just before serving.
