Recipe Ingredients for Quick beef scallopini

20 grams Prosciutto
1 tablespoon Sage
0.25 tbsp Butter
0.25 Glass Wine
0.25 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
1 dash Pepper, Black
100 grams Beef

Recipe Directions for Quick beef scallopini

  1. Cut each steak in half to make 8 scallopini or small rounds. Cut each piece of prosciutto in half. Beat the scallopini with a meat mallet until evenly thin.

  2. Place a slice of prosciutto and a sage leaf on each piece of beef, secure with toothpick.

  3. In a large non stick frying pan, melt butter over medium high heat. Add beef, prosciutto side up, and fry quickly for 1 min until golden brown. Turn over and fry other side for 1 min.

  4. Add wine, chopped tomato and pepper, simmer for 3 min, stirring frequently to loosen pan sediment.

  5. Serve scallopini immediately with sauce spooned over.
