Easy and quick banana bread or make into muffins

Recipe Ingredients for Quick Banana Bread

1 3/4 cups flour
2 1/4 tsp baking powder
1/2 tsp salt
1/3 cup shortening
2/3 cup sugar
2 eggs
1 1/4 cups ripe banana pulp

Recipe Directions for Quick Banana Bread

  1. sift together flour, baking powder, and salt.

  2. Blend until creamy the shortening, sugar, then beat in eggs and banana pulp.

  3. Add the sifted ingredients in about 3 parts to the sugar mixture. Beat the batter after each addition until smooth.
