Quiche - zucchini/summer squash and roasted tomato

Recipe Ingredients for Quiche - zucchini/summer squash and roasted tomato

7 ounces Egg Substitute
1/2 cup 2% Milk
1 cup low fat Cheese
1 medium zucchini
1 medium yellow squash
1 tomato
2 tablespoons of extra virgin olive oil
1 teaspoon of dried basil

Recipe Directions for Quiche - zucchini/summer squash and roasted tomato

  1. Preheat oven 375 degrees

  2. Slice tomatoe and put on a baking sheet and drizzle with olive oil and basil - put in the oven to roast until desired level

  3. Slice zucchini and summer squash -add to oven-proof pan (deep enough for quiche) warmed up with about a tablespoon of olive oil

  4. saute until lighly browned and soft

  5. While the vegetables are cooking - prepare the egg substitute and milk in a separate bowl and wisk to combine

  6. Add to the pan of vegetables: - roasted tomato, the mixure of egg substitute and milk and the cheese

  7. Swirl all ingredients together

  8. Move to the oven and cook for 30 minutes
