Recipe Ingredients for Quiche

5 large Egg, Whole
2 1/2 cup Shredded Mozzarella
2 1/2 serving Skim Milk
1/2 cup All Purpose Flour
1 teaspoon Baking Powder
1/2 tsp Salt, Table
16 oz Cottage Cheese, Lowfat, 2% Milkfat
4 cup, chopped Broccoli
1 1/2 cup diced Potato, Flesh And Skin
1/2 cup, chopped Onions
1 large whole (3" dia) Tomatoes, Red, Ripe
1 cup, pieces or slices Mushrooms
1 medium raw Bell Pepper Red

Recipe Directions for Quiche

  1. Preheat oven to 400 degrees.

  2. 2. Beat eggs and a cup of milk in a large bowl until fluffy. Add 1 1/2 cup mozzarella cheese, remaining milk, flour, baking powder, salt, and cottage cheese.

  3. 3. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking-spray. Add broccoli all other veggies except the tomato, and saute for 5 minutes or until tender. Add the veggie mixture to egg mixture. Pour mixture into a 3-quart casserole dish coated with cooking spray. Top with remaining 1 cup mozzarella cheese. Arrange tomato slices over cheese. Bake at 400 degrees for 15 minutes. Reduce oven temperature to 350 degrees (do not remove dish from the oven) and bake for 35 minutes or until lightly browned and set.
