Homemade quiche. This one with brocoli but you could sub most other veggies (bell peppers, mushrooms, spinach, onions, tomatoes etc.) for very little change in calories.

Recipe Ingredients for quiche

8 pie shell
1/4 pound Extra Sharp Cheddar Cheese
1 cup whole milk
3 eggs, beaten
1 thyme dash
1 summer savory dash
1 salt and pepper to taste
1 paprika dash
2 1/2 cups steamed brocoli

Recipe Directions for quiche

  1. Make custard by pouring milk into pyrex measuring cup. Add eggs to milk and beat together.

  2. grate cheddar cheese and place in pre-made pie shell

  3. chop brocoli florets and stalk. Steam. Drain.

  4. Add sprinking of salt, pepper, thyme and savory.

  5. place brocoli on top of grated cheese.

  6. pour custard over brocoli and cheese.

  7. Sprinkle with paprika.

  8. Bake in 375 degree oven until set, approximately 45 minutes.

  9. Serve warm or cold for breakfast, lunch or dinner.
