A light but hearty quiche. Can be lightened up more if one uses egg whites. The laughing cow melts nicely and the recipe tastes quite cheesy.

Recipe Ingredients for Quiche

1 serving size Light Swiss Original
1/5 cup Lowfat Cottage Cheese
2 large Egg, Whole
2 cup Spinach
1 tbsp Parmesan, Shredded Cheese

Recipe Directions for Quiche

Place eggs in blender with all ingredients. Blend until smooth. If you like visible pieces of spinach in your quiche go easy on blender speed. Poor into small oven proof container (I found a singl serving shepherds pie bowl worked well). Bake at 350 degrees for 30min.
