Quiche with chicken, spinach, onion, mushroom, broccoli

Recipe Ingredients for Quiche

12 oz light sour cream
5 large eggs
1 cup red onion, diced
2 cups mushrooms, chopped
1 3/4 cup broccoli, chopped
12 oz chicken breast
4 cups fresh spinach
1 clove garlic

Recipe Directions for Quiche

  1. Rinse the spinach and place in a saucepan on low heat. Stir to wilt then drain well, chop coarsely and set aside.

  2. Cook chicken breast. Chop and set aside.

  3. While chicken cooks, saute onions, broccoli, mushrooms, and garlic until tender then drain.

  4. Whisk sour cream and eggs. Add in chicken and vegetables (including spinach).

  5. Bake at 350 for 45 to 55 minutes.
