Individual breakfast quiche with shredded potato crust. Add any veggies you like.

Recipe Ingredients for Quiche w/ potato crust

1/3 cup shredded potato
1 tbsp. cottage cheese
1 ounce cheddar
2 tbsp. bell pepper
2 tbsp. broccoli
1 tbsp. onion
2 tbsp. mushroom
1 egg
2 tsp. milk, 2%

Recipe Directions for Quiche w/ potato crust

  1. Put potato in individual pie pan. Press around edges to form a crust.

  2. Put in veggies and cottage cheese.

  3. Whisk egg and milk and pour over top.

  4. Sprinkle shredded cheese over quiche.

  5. Place in 350 oven and bake until golden brown and egg mixture has set.
