If you use lite sliced jarlsberg cheese and a half a preprepared pie crust, you can have quiche for less than 250 cals/serving

Recipe Ingredients for Quiche lorraine

10 oz mushrooms
1 yellow onion
1 pie crust
1 bacon
2 slices swiss cheese
4 eggs
1/2 cup milk

Recipe Directions for Quiche lorraine

  1. Thaw frozen pie crust (I used Trader Joe's and only needed half of one crust to line pan). Spread on bottom of 9-inch pie pan

  2. Saute onion and mushrooms until browned and soft

  3. Tear up slices of cheese and put on top of pie crust

  4. Microwave already-cooked bacon and crumble on cheese

  5. Beat eggs with milk, add salt and pepper

  6. Put mushrooms and onions on top of bacon

  7. Pour eggs over all

  8. Bake 375 degres for 45 minutes or until eggs cooked
