Low fat version of ham and cheese quiche.

Recipe Ingredients for Quiche Lorraine

2 Frozed Pie Crusts 9"
1 1/2 cups egg substitute
8 oz reduced fat swiss cheese (8 slices)
4 oz fat free cheddar cheese (4 slices)
8 Onions
8 cloves garlic
10 oz Chunk ham (2 cans)
2 tablespoons low fat sour cream
1 teaspoon salt
1 teaspoon dry mustard
1/2 teaspoon cumin

Recipe Directions for Quiche Lorraine

  1. Poke holes in bottom of each pie crust with a fork

  2. Pre-bake pie crusts for 10 minutes or until slightly crisp

  3. Saute onions and garlic in skillet, drain off excess liquid and set aside

  4. Whip eggs with whisk until foaming

  5. Put half a can of ham into each pie crust flaking and spreading it evenly in pie crust

  6. Put half of onions and garlic in each pie crust spreading evenly across crust

  7. Crush cumin with mortar and pedestal

  8. Add salt, sour cream, mustard and cumin to eggs and stir well

  9. Pour 1/2 of egg mixture into each pie crust

  10. Shred cheeses together and put half in each pie crust

  11. Bake both pies in oven at 350 degrees for 30 to 40 minutes until fork comes out of quiche dry

  12. Cover edge of crust halfway through with aluminum foil to keep crust from overcooking

  13. Each pie makes six servings
