high in vitamin A and C, this version is high in cholesterol and saturated fat. For a leaner version replaced eggs with 1 cup egg substitute.

Recipe Ingredients for Quiche a la Grecque

1/4 cup feta cheese
6 medium (4-1/8" long) Onions, Spring Or Scallions
2 serving Extra Virgin Olive Oil
1 dash Pepper, Black
285 grams Spinach
2 sheet Phyllo Pastry Sheets

Recipe Directions for Quiche a la Grecque

  1. Preheat oven to 375 F. Place the thawed and drained spinach in a medium bowl, add crumbled feta cheese and green onions. Mix well.

  2. Place the eggs in a small bowl, add the milk and pepper to taste. Lightly beat with a fork until well blended

  3. Place 1 pastry sheet in a 8 inch pie shell, using a kitchen brush dipped in olive oil brush across sheet. Place a 2nd sheet on top and repeat. Using kitchen scissors trim around the shell leaving inch edge. Line the bottom of the shell with the spinach mixture spreading evenly. Then add the egg mixture

  4. Place assembled quiche in the oven with the oven grid placed in middle. Cook for 35 minutes or until the top of the quiche is firm and golden brown.
