Homemade egg and cheese pie...a tried and liked recipe in our home.

Recipe Ingredients for Quiche Correen

3 eggs
1 1/2 cups low-fat milk
1 tablespoon flour
1 dashes Nutmeg, Ground
1 Freshly ground pepper to taste
6 teaspoons Mustard, Prepared, Yellow
4 flour tortillas (snack-sized)
1/2 cup shredded swiss cheese
1/2 cup shredded sharp cheddar cheese

Recipe Directions for Quiche Correen

  1. Whip eggs to mix well. Whisk in milk, flour, nutmeg, pepper, and mustard; blending well. Set aside.

  2. Lightly grease a 9" pie plate or quiche pan with shortening or vegetable spray. Line bottom of the pan with flour tortillas.

  3. Pour in egg and milk mixture. Top with cheese and bake at 350 for 30 to 40 minutes or until eggs are set. Test with a butter knife in center if you unsure whether the eggs are set.
