Queso Blanco Recipe

Make your own stove top cheese. This cheese will not melt when heated.

Recipe Ingredients for Queso Blanco

1 gallon 1% milk
1/3 cup white vinegar
3 tbls kosher salt

Recipe Directions for Queso Blanco

  1. Boil milk.

  2. Remove a cup of milk and mix salt into it.

  3. Poor salted milk into the pot and return to boil.

  4. Add vinegar and take off heat. The curds form immediately.

  5. You can add vegetables or herbs at this point.

  6. Pour into collander, dispose of whey, and let set for 1 1/2 hours. You can also press it, but pressing is not necessary if you intend to eat it over the next few days.

  7. Note that this website gets the weight and calories wrong because lots of water and milk sugar goes out with the whey.

  8. It should make 20 1 oz portions.
