From the heart healthy cookbook + chicken

Recipe Ingredients for Quesedillas

1 3/10 lbs chicken breast
4 tomatoes
2 ears corn
2 red bell pepper
1 onion
2 cups monterey jack cheese
4 tbsp lime juice
2 tsp chili powder
6 9" tortillas
1 tbsp olive oil

Recipe Directions for Quesedillas

Grill the chicken,corn, bell pepper, and onion. Dice and combine, with 2 diced tomatoes, cheese, lime juice and chili powder. Lay a tortilla open and add mixture, fold over and grill (use oil spray on outside of tortilla). Flip after a few minutes, cut and serve. Top with more stuff if you want (that's where the extra 2 tomoatoes are used).
