One of my favorite things to eat.

Recipe Ingredients for Quesadillas

2 Flour Tortilla
1/3 c. salsa or pace picante sauce
1/4 c. mozzarella cheese
1/4 c. refried beans
1 red bell pepper

Recipe Directions for Quesadillas

  1. Heat a large enough pan to medium heat.

  2. Spread one side of one of the tortillas with the refried beans. Place it bean side up on the heated pan. Slice the bell pepper into thin slices and cover over beans. Sprinkle with the mozzarella cheese.Place the other tortilla on it and cook until light brown or golden. Flip the tortilla over and cook the other side until light brown or golden. Serve on plate, cutting into slices like a pizza- usually four or six slices. Cover with salsa. Eat like pizza, picking up and taking bites. :-) Mmmm.
