Fast weeknight dinner using leftover meat.

Recipe Ingredients for Quesadillas

2 corn tortillas
3 oz cup pork tenderloin
1/2 cup shredded cheese
1/4 cup onion
2 tbs sour cream
1 tbs salsa

Recipe Directions for Quesadillas

  1. Grill onion

  2. Add left over pork tenderloin, or chicken

  3. Remove from pan.

  4. Place one tortilla in pan, add a layer of cheese, some filing and top with another sprinkle of cheese.

  5. Grill for a couple of minutes, then flip.

  6. Remove and serve with sour cream and salsa.
