From "Real Simple" magazine This is an easy and satisfying recipe (but not low fat)! You can substitute one cup corn for the chicken to make it vegetarian

Recipe Ingredients for Quesadilla Pie

10 ounces enchilada sauce
1/4 cup plain yogurt
4 whole wheat tortillas (8 inch)
8 ounces cheddar cheese, grated
8 ounces chicken breast, shredded
1/2 onion, chopped
1/2 cup broccoli
1/4 cup salsa

Recipe Directions for Quesadilla Pie

  1. Combine the enchilada sauce and the yogurt. Spoon 1/4 cup of the sauce into the bottom of a shallow 2-quart casserole or 9 inch springform pan. Layer the ingrediants, using about 1/3 of the onions, broccoli, and chicken, and about 1/4 of the cheese and the sauce. Top with remaining enchilada sauce and cheese.

  2. Garnish with salsa, and cilantro and avocado (optional)
