Recipe Ingredients for Quesadilla Casserole

1 pound ground turkey
1/2 cup chopped onion
16 ounces tomato sauce
15 ounces black beans
8 3/5 ounces canned corn, undrained
6 whole wheat tortillas
2 cups shredded cheddar cheese

Recipe Directions for Quesadilla Casserole

  1. Brown ground trukey and onions, drain.

  2. Add tomato sauce, beans, and corn mix well.

  3. Add spices from McCormick packet bring to boil. Add Red Pepper to taste if wanted.

  4. Spread 1/2 cup of beef mixture in bottom of greesed 9x13 pan.

  5. Top with 3 of the tortillas, overlapping as needed. Layer with 1/2 the remaining beef mixture and 1/2 of the cheese.

  6. Repeat with the remaining tortillas, beef mixture, and top with cheese.

  7. Bake at 350 degrees 15 mins or until heated through. Let stand 5 mins before serving.
