Recipe Ingredients for Quesadilla Casserole

1 lb ground turkey breast
1/2 cup onion, chopped
16 oz tomato sauce
15 oz can black beans (drained & rinsed)
1 cup corn (undrained if using canned)
4 1/2 oz green chiles (undrained)
6 flour tortillas
2 cups cheese, reduced fat
2 tsp chili powder
1 tsp cumin
1 tsp garlic
1/2 tsp oregano
1/2 tsp crushed red pepper

Recipe Directions for Quesadilla Casserole

  1. brown turkey and onion. Add tomato sauce, corn, beans & chiles. Stir in seasonings (add red pepper to taste). Simmer 5 minutes. Spoon half of meat mixture in greased 9x13 pan. Top with tortillas, overlapping as needed. Repeat and top with cheese. (I actually layered tortillas on the bottom first, contrary to the instructions on the packet. I also layered cheese more often).

  2. Bake in a 350* oven for 15 min. Let sit for 5 minutes before serving.
