Recipe Ingredients for Quattro's Minestrone Soup

1/2 cup extra virgin olive oil
1 lb green cabbage (chopped)
1 lb spinach
1 cup onion (diced)
1 cup celery (diced)
1 cup carrot (diced)
16 cups vegetable broth
28 oz canned tomatoes
14 1/2 oz cannellini beans
2 cups fresh basil (chopped)

Recipe Directions for Quattro's Minestrone Soup

  1. In a large soup pot, heat the olive oil on low and slowly sweat the cabbage, spinach, onion, celery and carrot, covered for 45 minutes to 1 hour.

  2. Add the stock, tomatoes and Parmeson rind (4 oz), cover and bring to a boil.

  3. Reduce the heat and simmer for 12- 15 minutes.

  4. Add basil in the end.
