Recipe Ingredients for Puttanesca Sauce with Whole Wheat Penne

1/2 lb boneless, skinless chicken breast
1 T paprika
30 grams (10) kalamata olives, roughly chopped
2 cloves garlic, minced
1 1/2 t olive oil
2 c tomatoes, chopped
1 T capers
1 t oregano
2 T fresh basil, chopped
1/4 t pepper
1/4 t red pepper
2 oz whole wheat penne pasta
1/3 c grated parmesan cheese

Recipe Directions for Puttanesca Sauce with Whole Wheat Penne

In plastic bag, toss chicken with paprika. Place under broiler and broil 3 min per side. Chop when cool. Saute garlic in olive oil over medium heat until golden. Add olives, capers, basil, oregano, black and red peppers. Saute for 2 minutes. Add tomatoes, bring just to a boil, lower to simmer. Cook penne according to package directions. Add chicken to sauce, cook 3 minutes. Toss penne with sauce and serve with fresh parmesan or romano cheese.
