Recipe Ingredients for Puttanesca sauce

2 tblsp oil, olive
1 onion medium, chopped
3 cloves garlic, choped
3 anchovy fillets
1 tsp red pepper flakes
1/2 tsp oregano
1/2 cup red wine
2 tblsp capers
1 cup kalamata olives
28 oz diced tomatoes
1 salt and black pepper to taste

Recipe Directions for Puttanesca sauce

  1. In a large casserole over medium heat, heat the olive oil. Add the onion and garlic and cook stirring occasionally for 5 minutes or until softened.

  2. Add the anchovy, red pepper and oregano. Cook stirring constantly for 1 minute or until the spices release their aromas.

  3. Add wine, and simmer until it reduces by halft

  4. Add the capers, olives, tomatoes, salt and pepper. Bring to a boil, lower the heat to medium, and simmer for 20 minutes, or until tomatoes form a chunky sauce. Taste for seasoning and add more salt and pper if you like.
