Recipe Ingredients for Putanesca with Chicken

28 ounces diced tomatoes
12 anchovies, chopped
2 cloves garlic, minced
20 kalamata olives, pitted, chopped
1 tbsp olive oil
4 tbsp capers
1/4 cup red wine
1 lb chicken, breast, no skin, cut into 1" pieces

Recipe Directions for Putanesca with Chicken

  1. heat oil in large skillet over medium-high heat

  2. add garlic and sautee until brown

  3. add anchovies, capers and olives - sautee for 3 minutes

  4. add tomatoes and red wine

  5. add fresh basil and oregano to taste

  6. simmer 10 minutes, uncovered on medium to reduce liquid by 1/2

  7. stir in chicken and simmer on low for 1/2 to 1 hour

  8. serve over pasta (recommended: whole wheat fusilli)
