Purple cole slaw (tangy) made with smart balance light mayo and rice vinegar

Recipe Ingredients for Purple Slaw

1050 g red cabbage
120 g onion
2 t Sodium-Free Salt
1/2 c smart balance mayonnaise
2 T rice vinegar
2 T Agave Nectar
3/4 t celery seed

Recipe Directions for Purple Slaw

  1. Shred cabbage - 1050g was about a half of a large head minus the core

  2. Place into LARGE mixing bowl much larger than the cabbage shreds (for mixing space later)

  3. Sprinkle with the salt substitute to slightly wilt it

  4. Mince the onion and layer into the cabbage

  5. Mix remaining ingredients with a whisk

  6. Pour over wilted cabbage and onions

  7. Mix with hands or if that bothers you with tongs

  8. Place into a storage container and refrigerate.

  9. This made 8c of slaw. A serving is a half cup.
