Recipe Ingredients for Pureed Beet Salad

4 Beets
16 tbsp chopped walnuts
6 cloves garlic, minced
7 tbsp olive oil
4 tbsp rice vinegar
1 tsp salt

Recipe Directions for Pureed Beet Salad

  1. Boil beets until easily pierced with a fork (~40-50 minutes)

  2. Peel and chop roughly.

  3. Blend beets, walnuts, garlic, olive oil, rice vinegar and salt.

  4. Blend until smooth
