Smooth broccoli soup that is great for cold days

Recipe Ingredients for Puree of Broccoli soup

2 lbs broccoli
1 1/2 quarts of chicken stock
1 medium onion
1 1/4 cups leek
1/4 cup olive oil
4 tbsp flour

Recipe Directions for Puree of Broccoli soup

  1. rough chop broccoli.

  2. dice onion and leek.

  3. add all vegetables to stock pot with oil and saute until the onions are just clear.

  4. add the chicken stock and bring to boil.

  5. add flour and mix well to make sure that there are no lumps.

  6. simmer for 45 minutes to 1 h and then transfer the mixture into a food processor and puree.

  7. Return the puree to the pot and return to low heat adding salt and pepper to taste.

  8. when ready to serve squeeze a lemon over the bowl and drizel heated cream over the bowl.

  9. serve
