Pumpkin spices plus zuchini make this a warm and comforting fall food. It'll be better if I can reduce the butter and sugar content.

Recipe Ingredients for pumpkin zuchini bread

3 eggs
1 3/4 c sugar
1 c canned pumpkin
1 c butter
1 T vanilla
3 c whole wheat flour
1 t baking soda
1/2 t baking powder
1/2 t salt
1/2 t cinnamon
1/2 t nutmeg
1/2 t cloves
1 1/2 c shredded zuccini

Recipe Directions for pumpkin zuchini bread

  1. preheat oven to 350

  2. Mix together eggs and sugar.

  3. Add pumpkin, butter and vanilla

  4. Combine dry ingredients; gradually add to pumpkin mixture and mix well.

  5. Stir in zuchini.

  6. Pour into greased and floured pans.

  7. Bad at 350 degrees F for 45-50 minutes (for 9"x5" bread pans) or until breads test done.

  8. Cool in pans for 10 minutes, then remove to a wire rack.
