A healthier alternative to oil-loaded and sugar-loaded zucchini bread.

Recipe Ingredients for Pumpkin-Zucchini Bread

3 c whole wheat flour
1 tsp baking powder
1 tsp baking soda
3 tsp cinnamon
3 tsp vanilla extract
1 c pumpkin, canned
1/2 c Eggbeaters
1 c Splenda
4 c zucchini, shredded
1 c walnuts, chopped

Recipe Directions for Pumpkin-Zucchini Bread

  1. Spray and coat three pans with flour.

  2. Preheat oven to 325.

  3. Mix the first four ingredients in a bowl.

  4. Mix the next four ingredients into another bowl.

  5. Mix the dry ingredients into the second bowl.

  6. Blend well.

  7. Add zucchini and walnuts.

  8. Mix.

  9. Bake for an hour.

  10. Cool for twenty minutes on a rack.

  11. Cut each of the three loaves into six equal portions.

  12. Wrap each portion and freeze.

  13. Thaw prior to eating.

  14. Eat.
